I was quoted 260 for replacing front brake discs, and all brake pads on a Saab 9-3. Tempted to try doing it myself. Any thoughts?

    Always.

Joke aside, it's not too difficult even for a newbie.

It's a grand job, and there are plenty of good guides online to take you through it. I've done them on mine and it was no bother, just take your sweet time and print out steps and tick them off as you go. And do one side at a time, you can use the other side for reference when putting them back together, and take pictures of the process for your own benefit.

Brakes probably be fine. Discs can turn into a disaster for driveway hobbyists, depending if whatever aligning/retaining bolts decide to play nice or round off completely... may not apply to the saab.

If you're going for it, get a piston tool before you start. It's a real pain without it, and you don't want causing damage when winding it back in.

Yeah, the rears are a b*tch without a rewind tool.
You could do the fronts yourself (just take it handy when pressing caliper piston back, very slow does the job) and see if you can get the rears done by a local indy with the Saab tool for XX euro (you supply pads). It's a quick and easy job when you have the right rewind tool.

Watch more youtube vids to get a really good understanding of what's needed and what parts are crucial.
