bike choice

Looking for a bit of advice, the time has come for a bike change so I'm wondering what other cyclists think of my choice. 3 years on a giant rapid is too long for any enthusiast!
I started commuting to work about a month now, 70k and 1000m gain weekly, but i use my Merida 29er with road tyres for this, at over 14kg, it will make good winter training.
My choice last week was a Kuota Kharma for €2 grand, lovely bike, and has an aggressive stance for competitiveness if required of it. But a visit to the cycle co op in dublin has changed me completely.
I would like to try a bit of cycle cross off season, as i have really enjoyed the trails in Ballyhoura. I looked at the Cannondale Caadx Tiag, and got a second set of wheels with slick tyres for the sportifs thrown in for €1500. Aluminium with carbon forks.
I also saw the Giant revolt, and extra set of wheels for the same money. the giant is all carbon. Both bikes have mechanical cable drive disc set up, i heard its not great, but my budget won't stretch to the hydraulic set up.
Is anybody doing this switching wheels for different purposes thing? Heard that the chain and sprocket wear together, so switching a different wheel won't mesh? True?
I prefer the look of the giant, but the thoughts of off-roading a carbon frame scare me.
