any decent mechanic should be able to resolve this. is the pedal hard to push on or does it sink to the floor when applied? Has the operation of the calipers been checked? has the fluid ever been changed?

Is the lack of braking effort since the pads & disks were replaced?

A stiff pedal could suggest a problem with your brake servo, if its only occured since your pads and discs have been replaced then I'd be wondering if the mechanic cleaned off the oil that is on the brake discs during production to prevent corosion. if that contaminated the pads then there would be reduced brake force.

suggests that coppor grease wasn't used on back of pads.

    prevents the noise :D
the noise is caused as there's space free behind the back of the pad, leads to movement/vibration under braking, heard as noise.

Fair enough. Something I was unaware of.

Anyways it is hard to find any decent mechanics around here that will fix the issue.

George Dalton near abbeyleix..posts here too. Highly recommended...
