It's a good while back now ...milking about 45 Holsteins all year round in north Kerry. Glenisk were taking the winter milk (but didn't want to know about the summer stuff ... )
First thing is find the nearest organic dairy farm to you , and chase down processors , there aren't many ..
Ring the organic bodies ,Iofga and organic trust who'll put you on to both nearby producers and processors..
If you're planning on just spring milk it could be tricky to find a market ...
Buying in feed (meal and fodder) is really expensive, so you'll have to do your sums... How's your grass management/budgeting... If it's important for conventional it's crucial for serious organic producers ...
Housing can be tricky... (I may be out of date here). Straw bedded is the ideal , seen a good share of cubicles though, plenty of space needed, as in big cows would need big cubicles..and more cubicles than cows....
It can be done profitably- doesn't mean it's always profitable ...

Don't know if your a teagasc fan or not , they have (or had) an organic demo farm in Johnstown castle in Wexford... Which was a demo on what you could do with best of ground, best climate and unlimited funds... Not many farmers at that end...
There was ( or is) another teagasc demo farm at solo head , researching plain cattle on heavy ground with low inputs... Much more applicable...

Get onto IOFGA website, check down the list of members until you find someone close to you licensed to produce milk and give them a call.

I'm sure most organic farmers will be more than willing to share their experiences.
