Improving chocolate tart

    Hi,

    I've done my first tart yesterday - it was a chocolate tart. Now in terms of tweaking the flavour it's rather easy, but I would like the filling be lighter.

    The filling I've done was:

    750g of milk chocolate
    260ml of double cream
    120ml of booze

    Any ideas how to improve this rather heavy block of melted chocolate ?

    Adding eggs and baking it will make the filling lighter.

    I use this Rachel Allen recipe.

    You could try folding in beaten egg whites (stiff peak stage) to the mixture. Make sure you fold in rather than stir though to keep the mixture light.
