It turns off automatically the moment you take it off the holster that holds the pump. There's a sensor on the holster that resets and away you go. Obviously make sure it's the proper fuel ie petrol or diesel.
Petrol is normally a green pump and diesel is black pump.

Normally the person working inside the filling station/shop will press a button as soon as you lift the fuel pump. This automatically resets the counter on the fuel pump to zero and allows you to fuel your car.

    Remove cap
Lift the fuel nozzle and place in the tank hole
Wait for the pump machine to start humming and the counter to reset itself
    Fuel up

If it doesn't, it's a pre-pay pump - need to go inside, cough up the cash and then you can fuel. Most petrol stations would be "fill first then pay", but some random prepay exist - and you do see people (including myself!) wondering why the pump won't work, until they notice the little "Please pay first!" sticker on it :)
