When to Apply Paving Sealant?

My parents recently got a new patio constructed in the back garden. This is constructed from paving stones. The stone merchant who sold them the paving slabs also sold them some patio sealer and told them it should be applied over the whole patio two weeks after they were installed. However the tradesman who did the installation said that they should wait for 3 months to do this so as to allow the patio time to acclimatise.

So, now they're confused and unsure who to listen to. Would anyone with any experience in this area be able to advise them on this matter?

What type of sealer is it? I can understand, at a pinch, not sealing the joints until it has settled. Is that what they are talking about?
