I have a number of items to send that are just millimetres over the maximum letter size. Do An Post allow a bit over or is it strictly to the guidelines? As I'll be selling them, I don't want to risk bad feedback if there's a chance of them being delayed or the buyer being charged extra postage on delivery.

    An Post letter: 235 mm × 162 mm × 5 mm, 100 g
    My packages: 238 mm × 163 mm × 6 mm, 90 g

I think your best option , is rather than put a stamp on them and put them through the postbox , you should go to An Post counter and let them print off a stamp .

Its unlikely they will squabble over 3mm

Either way , you should put an address label with your return address in the top left-hand corner , just in case .
