Buying a whole butchered lamb - am I in the right place?

    Hi all,

    I'm looking to buy a whole butchered lamb for delivery to Stillorgan. I know there are a couple of businesses with online ordering where you can order the lamb and they will butcher it to your preference and deliver it.

    Before I go asking for some advice for recommendations on where to order from and how best to have it butchered (legs butterfly'd or whole?, shoulders boned and rolled or not?) I thought I'd better check that this is an OK topic for this Sheep forum?

    If I should take myself over to the foot or butchering forum (not sure there is a butchering forum!) please let me know or Mod's please feel free to move to wherever appropriate.

    the butchering options refer to the size of the cuts, if you have big family dinners(more than 6 good meat eaters) you might want to consider keeping the legs whole.
    but get the shoulder boned, they're a curse to carve. meat cooks better on the bone but the shoulder isn't worth the hassle

    are you considering taking the liver and kidneys too?

    If you want are hung between which site to buy it off I'd suggest http://www.irishfood.ie

    Get the cheaper cuts such as stomach minced its a lot easier and more useful

    I quite fancy either Wicklow lamb and these guys http://www.kilmullenlambdirect.com/index.html offer an 18kg to 20kg carcase weight lamb for €170 or some Kerry lamb http://www.ringofkerryqualitylamb.ie with a 21KG lamb delivered for €160, see http://www.ringofkerryqualitylamb.ie/full-half.html which is the best value I've seen on my quick search. A hill/mountain lamb can be delivered for the same €160 but it's carcase weight is only 15kg to 18kg. I guess it would be a bit leaner and gamier but I quite like my lamb a bit fatty :D

    I'll definitely be taking the kidneys and liver. I love both!!

    In terms of cuts I think leave the legs boned (which I cook for Sunday lunch almost every second week as my family just love a roast lamb Sunday lunch) but I'll get the shoulders boned and rolled.

    You could try info@killruddery.com or http://www.killruddery.com/shop/ they do sell their own lamb and pork (usually on their website). A quick email will get you some prices. I recall that you can ask for all the bits too!

    but you're correct kidney's liver and heart are the offal that is sold to humans.

    I actually cycle out that way but I'm not familiar with the farm. I ordered a regular full lamb from The ring of Kerry lamb farmer co-op for €160 delivered http://www.ringofkerryqualitylamb.ie/full-half.html earlier but I might take a trip out to Waterfall Farm over the next few weeks to see what they offer. It sounds like a nice place to visit for a coffee and to pick up some other produce.

    I also found out this afternoon that Dunnes are currently doing a deal on legs of Lamb for €7.42 per KG which is serious value so I loaded up the freezer with 8 of them!! 2.5KG legs of lamb for €18.55 isn't to be sneezed at!! I'm going to try butterlying one and BBQ'ing it on Sunday

    Michael at waterfall farm is a very dedicated deer hunter too and could provide a deer (venison) if you are interested, ask for a yearling or a calf as they are best for taste and tenderness, just like lamb.
