Drylining options

Ive posted this in DIY section but got no response.

We have an old stone cottage with a later built solid concrete extension.
Now we have built another room by building just 2 walls to square up the house and am wondering about insulation and drylining.
We were told to pump new walls and insulate internally also. The 2 old walls are solid stone and the other solid concrete. The old walls are now going to be internal walls but have been external walls until now.
What is the best way to deal with these walls. We are thinking of using an isolated stud and insulating them also even though they are inside walls. This would help with cold bridging details where new walls meet old as we would be insulating internally for the entire circumference of the room.
Roof insulation can be easily upped to about 500mm quilt over the entire house.
Im just worried about these old outside walls being now internal and how best to deal with them

What's happening at ground level? & What is the ventilation strategy? Regularly people do not give proper consideration to the 'whole' house when upgrading one item.to answer your question vented cavity drying is difficult, what do you do at the floor, first floor & eaves?
