I highly recommend climbing to Arthur's seat at the top of Holyrood park. It's not tough at all and provides brilliant views of the city. You can get to the top and back down within an hour and it's a very short walk from city centre.

The National Musuem of Scotland is also really good, there's something for everyone there and it's free. I highly recommend the Camera Obscura museum as well. I thought it might be more of a kids thing but all 3 of us really enjoyed it and it was a lot of fun.

The castle is also worth doing but that's already on your itinerary!

As for pubs, there are a group of usually very lively pubs in the grassmarket area, which is a small pedestrianised area, mostly consisting of pubs, just around the corner from the castle. The royal mile has a good number of pubs and restaurants (mostly pub grub) but you'll pay a bit extra for them as it's basically the main tourist area.

I found the castle a bit meh.

Holyrood is better in my opinion.
