    Anyone know where I can buy this stuff in Dublin? Trying to make Modernist Cuisine's version of mac n cheese.

    Isn't it citric acid? Maybe not.
    Anyway, if it is, you can get it in chemists.

    apparently not, sodium citrate is apparently a more complex compound. I think it can be made crudely by mixing baking soda with citric acid. Not sure of the ratio and how pure a product it would be.
