Algarve - Holiday Options family of 4

    Hi All
    Looking for recommendations for holiday to Algarve for 2 X Adults , 1 x 7 year old and 1 x 4 Month Old.
    Hoping to book flights and accommodation next week and leave the following week on Monday / Tuesday for between 10 and 12 nights and have a budget of approx. €2,500 incl flights.
    Looking for somewhere with following items :
    - Apartment accommodation need kitchen area for prep bottles etc
    - Half Board / Full Board / All Inclusive Basis - Easier with young lad to pick and choose foods. Self catering not an option with him as cost us fortune as he loves picking items of adults menu
    - Evening entertainment for kids nothing to fancy anything with a bit of a show and a mini disco is great
    - Good pool with enough sun beds that all are not taken by the 6am brigade

    All recommendations welcomed but again no interest in self catering option also any good websites for late deals welcomed
