If you change the sky in photoshop would you also need to change other parts? Would there be shadow and how to know where to change it?

I have a picture of a castle. i want to change the sky to dark to give it a dramatic appearance

you could try darkening the sky that's already there, but swapping in a completely different sky is a very difficult task to do right.

That depends on what post processing/editing software you are using? Also how blown out the highlights are etc..
