Planted in late April/early May, same size as shop bought but very green. Do I need to wait until it lightens in colour? Gardening newbie here.

The greenness has to do with the way it is grown rather than its development. It is not going to get any lighter. The very light celery is blanched (the stalks kept dark), the green would be a bit stronger tasting but I like it like that! You need to be eating it though as it will get a bit tough from now on, or start to bolt/flower, when it will definitely not be as nice, though still fairly ok for cooking.
