I'm on a J1 over here in the US for the summer and was wondering could anyone give me advice on converting the dollars I have earned back into euros, when I get back home.
I'm wondering whether Bank of Ireland, AIB or Ulster Bank are the best regarding exchange and commission rates?
And whether a cheque or cash is better to convert?

If you have it in a bank account something like currency fair could be the best way to go.

Keep it in your Irish bank account then open a US one when you land then use currenyfair to transfer the money from Euros to USD you will save yourself a good chunk of change.
