When changing tram, I presume I don't have to touch off on again, do I?

No. Only when you complete your journey.

If you are going from stephens green to Abbey street, you need to touch off and back on again. it'll combine the 2 journeys into one. but if you don't do that it'll assume 2 seperate journeys.
