Changing the pads

    Jacking my car up the other day and the pads seems to sticking on all wheels. When I spun the wheels I could hear them catching the disc.
    I have a 2006 Jetta.
    The pads have plenty of material left on them.
    Would taking them off and reassembling cure the sticking?
    Do I need a special tool to wind back the piston on this car?

    You might not have a problem. a car wheel won't spin freely like a bicycle wheel for example.
    You will always have a small bit of resistance one the brakes are assembled.
    Given that you say all 4 are the same, is probably normal.

    Go for a spin, use the brakes as lightly as possible and after stopping, quickly put the back of your hand to the discs/calipers.

    It shouldn't be too hot, and there shouldn't be any strange smells either.

    As above, there's always some resistance what with the weight of the wheel tyre disc hub etc.

    The discs will be hot enough to burn skin even with light braking. If your doing that test just feel the steel or alloy wheel and compare to opposite side.

    Its very unlikely all calipers are binding from OP first post its unlikely there is problem.

    If OP wants to do something be better off cleaning and regreasing slide pins. They probably are ok but it will do no harm and gives a reason to be inspecting the breaks while doing it.
