Can carpet be laid on plasterboard?

    2nd floor of house is bring refurbished and I'm thinking of laying plasterboard on top of the t&g chipboard floor, in order to give more soundproofing but can carpet be laid on top of plasterboard?
    (no issues with skirting or doors as they aren't fitted yet)

    No. Plasterboard wont last under foot and will crumble away and break in no time. There are lots of products available for the purpose you require.
    For example have a google on Rockwool floor insulation and you will see examples of proper build up.

    Hardibacker 500 board or there is a specific gypsum floor plank (from Knauf iirc) or Cellecta board is what you want.
