Multi day metric centuries?

    So I am off on Fri from work. Planning around 100k plus a bike fit.Sat im going to Carlow just over 100k. I plan on going back up Sunday another 100k. I will have a back pack on 2 journeys. I have done the cycle to Carlow plenty of times. I am more concerned about carb intake. How have u guys done it? Endurance is not an issue for me im concerned of bonking on Sunday home as its to be a head wind. I can habdle eating for one endurance event but never multiple.
