    Looking at 2 laptops,1 is an Acer E1-572 15.6",4GB memory,500GB storage with i5-4200U processor.
The other is a Lenovo G500 15.6",8GB memory,1TB storage with i3-3110M processor. Would the extra 4GB memory on this Lenovo compensate for the slightly slower i3 processor? Or would the Acer be a better buy? Both same price.

I would go with the Acer. The processor is not hugely better, but it is a newer model and will be more efficient. It will run better and most likely increase the battery run time.
As for the Ram, Ram is always the easiest upgrade for a laptop, its simply pop out the old, pop in the new.

If you can suffice with 4GB for now then stick with it, and get the Acer.
If you NEED the 8GB and can't afford to upgrade it in the Acer yourself, get the Lenovo.

I would go with the better CPU if the Acer can be upgraded to more than 4GB of RAM which it more than likely can if needed.

RAM is much easily upgraded than a CPU too :)
