How long will my chocolate sponge stay fresh?

I'm making a birthday cake for my son next Sat, chocolate sponge , I'm thinking of cooking it the day before and covering it in fondant, just wondering will this keep it fresh enough to serve the next day? Thanks

Yes, ice it while it's still very fresh and it'll be perfect
