The Dunraven Arms in Adare, they do sandwiches and a full lunch menu. Or briefly leave the M7 (exit 27 and go right) and visit the original Matt the Thresher in Birdhill.

If you're stopping in the Dunraven Arms, don't attempt to park in their car park when travelling to Kerry, instead go on to the roundabout, turn right and park up there somewhere, makes getting back on to the road to Kerry much easier as the main street is usually clogged up in the summer with the tourists.

Otherwise see if there's a Supermacs along the way.

Best advice is don't travel the M7 via Limerick and Killarney to Sneem. The Road from Sneem to Killarney is a disgrace and from Killarney to Limerick is just an 80kph route of convoys, slow drivers and speed camera vans put anywhere there is a half decent stretch of fast safe road.

Travel the M8 to Cork from Dublin, N22 towards Killarney turning off for Kilgarvan, Kenmare on the R569 and then the N70 from Kenmare to Sneem, a slightly longer journey in terms of distance but a faster route, far less stressful and a quicker journey due to higher speeds attainable on the superior roads.
