I am home on holidays for 3 weeks . I have a full Australian driving license. My Irish driving license has expired. My father has a van which I can use while I am at home. Do Irish insurance companies accept Australian licence's as a valid licence for driving here ??

Some do, some don't. You will need to check with the insurance company in the morning.

Some do accept non-EU licences, may come with an extra price tag.
