Anybody recommend a good 8 speed derailleur for a road bike? Just had a Shimano Altus fitted on my Giant Defy. Will it do the job or is it more designed for mountain bikes?

It should be fine. It's just branding. You can mix and match Shimano 9 speed and below. Touring bikes tend to be built up with a mix of road & MTB components.

Just make sure the chain is long enough, as MTB derailleurs come in a range of sizes as the cassettes can be much larger. Put it the big chainring at the front and the largest cog at the back (you shouldn't cycle this gear ratio as you'll stress your chain). If the chain is too short, the rear derailleur will be pulled too far forward and could get damaged.
