    Hi all,

    I've been vegetarian for quite some time now and went vegan less than a week ago. I was hoping we could start a vegan recipe share thread where we come on and post any and all delicious vegan recipes we've tried. Would love to get a portfolio of easy enough, go-to recipes.

    If there is something like this in here already, forgive me... I did have a look and couldn't find anything.

    Anyway, I suppose I'll kick start it!

    Sesame Peanut Spaghetti
    Ingredients
    Brown Spaghetti
    Onion, chopped
    Garlic, chopped
    Peanut Butter (I like the crunchy kind)
    Sesame Seed Oil
    Soya Sauce
    Sesame seeds, toasted

    Method
    • Cook the spaghetti in boiling water as per instructions on packet.
    • Meanwhile, gently fry the garlic and onion in the sesame seed oil. When soft, add in peanut butter and soya sauce. Cook until it forms a sort of paste.
    • Drain the spaghetti. Mix with the sauce. Serve with some toasted sesame seeds on top.

    Tried this last night, was divine! As you can see from the picture, my presentation skills leave a lot to be desired!

    I don't have any actual recipes to share at the minute but I cannot recommend the Oh She Glows website enough, so many yummy simple recipes, the nacho Plate in particular is delicious. I love her so much I've just ordered her book too :)

    We have a recipe and links thread but nothing for specifically vegan and specifically about easy recipes so that's grand I think.

    Great links there.

    Made a lovely little treat yesterday as an after dinner snack. So simple:

    Slices of banana with a bit of peanut butter, raisins and shredded coconut on top. Delicious!

    Check out deliciously ella website. She has fab vegan recipes and lots of hints on nutrition too. I made the quinoa and butternut squash with avocado dressing the other day which was divine. Am going to try her sweet potato brownies next :)

    Funnily enough, our dinner was vegan tonight : Minestrone with homemade foccacia.

    Now, the minestrone is easy and quick, the foccacia is easy, but takes a good while as the dough needs to rise.

    Minestrone :

    1 chopped onion
    1/4 stick of celery (add more if you like celery, I don't but have to have it in soups ;) )
    1 carrot, cut into small cubes
    1/4 turnip, cut into small cubes
    100g of frozen peas
    1/4 head of cauliflower, broken into small florets
    1/4 head of broccoli, broken into small florets
    1 bay leaf
    2l vegetable stock
    2 - 3 tbsp of tomato puree
    100g broken spaghetti or other leftover bits of pasta broken up

    Sweat off the onion, celery and carrot in a little olive oil. Add the remaining vegetables (minus the broccoli and peas), add the vegetable stock, tomato puree and pasta.
    Simmer for about 10 minutes, then add the peas and broccoli.
    Add salt, pepper and chili if you like.

    It's really great for any leftover vegetables you might have that need using up :)

    honey
    udon noodles
    sesame oil
    carrots
    mushrooms
    spinach
    sesame seeds
    (plus...I add cashews and tofu to everything :o but that's just me)
