Is there a market for niche catering?

    Hi

    I start a culinary arts degree in September and i know a first year project is a detailed business plan on a food business. An idea i have is basing my plan on a business specializing in hand made canapes for corporate business',launches,family occasions,parties etc. Im centrally located and no more than 30 minutes from towns like Tullamore,Athlone,Ballinasloe etc. Just wondering is it a service people might use?Any tips or ideas would be great as I've nothing on paper yet and just seeing may it be a viable idea.

    I would have thought that canapes and such are pretty standard fare so it's not really a niche.

    I would think there's definitely a market for good caterers but it's far from easy as there are a lot of overheads.
