There's a good few trains (about every hour or two) from Barcelona Sants from about €10pp each way I think, and takes about 1hr 45mins on the slower trains. Much of it is along the coast too.

You'll have to choose the Search all Stations function (blue button down on the right) as Cambrils doesn't appear in the drop down menu.

From personal experience, the best way to do this journey is with a rental car. That's assuming that you have all the usual baggage with you, ie suitcases, cabin bags, kids backpacks etc. I'm also assuming one of you has a driving license.
If you want to minimize rental cost, you can rent the car for two or three days until you get your bearings, return the car to Barcelona on your own, get the train down to Cambrils, and then return to Barcelona with the family, on the train, at the end of the holiday :)

Used Transbuca a fair bit a few years ago. Found them very good.
