Every butcher shop I go into seems to have at least one overly talkative butcher. I've also noticed that the louder butchers also tend to have a hint of arrogance to them. People in chemists and opticians are also overly polite.

They have a meat cleaver in their hand - they can be as chatty as they like and no one is going to stop them.

I work on a meat counter and I basically talk to customers because by speaking to each for, say 30 seconds, I can spend up to 15 minutes of my day not working!

Maybe another 10 mins with the 40 something's when chatting about the quality of your sausage or if the want a bit more stuffing?
