Can anyone tell me if the exchange rate from EUR to GBP is any worse on the boat than I'd get on one of the fx shops in Dublin?

Leaving currency conversion to the last minute like the airport or on board the ferry is guaranteed to get you screwed. What you describe as the 'fx shops' in Dublin are usually not much better. Check out AIB, BoI and An Post and convert with whichever of those is best. The post office advertises 'commission free' but that doesn't mean they will be best on the day.
