Where to buy?

I'm heading off travelling in 2 weeks and I'm contemplating buying the MBP retina - top end model.

However, I know buying off the apple store could take up to two weeks and therefore I don't want to order it and not have it before I leave.

Are there any physical shops in Dublin or Galway that stock the full spec'ed MBP or would I have to order it online?

Harvey Norman have the MBP Retina and have stores in various locations. There shouldn't really be any reason to buy from the Apple Store unless you intend to avail of a student discount or are registered for VAT or are interested in a refurbished model etc. ;)

Can't see the 15 inch version with 16GB option there though?

I think if I wanted that option, then I'd need to configure it up via the apple store?

That would be the way to go for a specific configuration imo.

If you get the stock upper MBP, then it'll ship within 2 days from the apple store.

The other option is if you're going somewhere through some of the big international airports you should be able to pick up a good duty free discount. Although you mightn't have the choice of models there. Or indeed if you're going to the states, you can pickup the stock models in any of the apple stores.

Personally if I was going travelling, I'd get a MBA, those new MBP's are damn heavy to be lugging around.

Not really. The 13-inch Retina is only 220 grams heavier than the Air.
