Was just testing the water looking at new avenues I'm looking to possible go down in the near enough future. At present I'm working as IT (Desktop) Support, dealing with the whole lot, from Sonicwall configs to installing Adobe Reader (8 months to date doing it).

I've an Ordinary Degree in Computing, and have a bit of hands on hardware stuff from Secondary School work experience and my own nixars but that's it. Also have 4 years experience in retail so my face-to-facer skills are excellent.

Looking around though at jobs for this particular field it seems everywhere is looking for at least 3+ years experience in a similar role and I've never seen Junior roles, etc... How would one go about getting a foot in to go down this route?

To be honest, your best bet is to progress within your own company. Back in the mid nineties I worked on a helpdesk for pc users (retail customers) and then got the opportunity to move due to the company changing what they were doing.

Look for opportunities in your company and take advantage of them, look for training you can do, and that the company will provide to differentiate you, lots of people put down the likes of ITIL certification, but plenty of companies see it as a plus.

Take advantage as well of offers on training on the likes of groupon etc

Sierra do all the field instalations for UPC and Sky, Ergo do a lot of field stuff as do Typetec and HP.

Follow these types of companys on jobsites and linkedin.

Send your CV to lots of agencies outlining very specifically what you're interested in.

And trust me, ignore the minimum experience, You have way more qualifications and experience then I had when I had my first field service role many moons ago.
