Its not a hosting question per say so not going against the grain.

I wont go into the specifics suffice to say I working on a site and the current hosting setup wont allow open source websites(!?)

Anyway question would be, is it possible to have a website hosted by one company (domain hoster A) and the email etc remain at the original (domain hoster A).

Yes, email and the website can be hosted separately. Just set up your A and MX records appropriately.
