Job interview next week!

    I was made redundant from my last employer at the end of 2010 and next week I have an interview for a job, only my second interview in that 3 year period. I was unsuccessful at the last one which was almost two years ago. Throughout the 3 year period I was actively seeking work, to no avail, but I spent the first year of my unemployment minding my siblings' young children and also helping out a friend with some office admin and with other minor aspects of her business. I didn't even document this on my c.v. I have loads of qualifications that I obtained over the years but I didn't undertake any further education as I just didn't have the money to pay for courses. My main priority since my last job ended was keeping my head above water financially as I live alone and it was a huge struggle to keep the bills paid. During that time I also became ill for a while as, well let's say after having worked fulltime for 28 years, I didn't adjust well to be unemployed and it got to me.

    The thing is I am anxious as to how I am going to explain at interview what I was doing since my last job ended. It appears on paper that I just rested on my laurels while the truth is I was battling away doing what I needed to do to stay afloat. Has anybody been in the same situation as I would appreciate some advice on my dilemma, hopefully some interviewers will see my post and give me some tips as to how I can come answer satisfactorily this question if it comes up.
