keeping red wine when opened

    Hi All,
    im the only one at home who drinks wine, Im wondering is there a way of keeping red wine drinkable once it has been opened? I'd enjoy a glass or two on a saturday night but find that I'm throwing nearly half a bottle out as its not very palatable by the following week..
    any advice would be welcomed

    If you can get one of those vacuum corks/wine pumps, that'll help and then keep it in the fridge and it might last a week

    The trick is to try and reduce the amount of oxygen the unused wine is exposed to. Transfer it to a clean smaller bottle with a screw cap and put it in the fridge, that should help.

    Not sure about that. Transferring the wine is going to introduce oxygen.

    I find if I re cork the bottle and put it in the fridge it'll be good for about 3 days but not a week. I thin the vacuum sealers are a waste if time.

    Putting it into the smaller bottle will add oxygen but a using a very unscientific term it is fresh oxygen. The 'stale' oxygen between the wine and the top of the larger bottle is the one that can do the damage.

    Really all you can do is try and prevent as much of this damage happening as possible and the fridge using either the original or a smaller bottle is definitely your friend.

    Don't throw it out - cook with it at least if you're not going to drink it.

    Can be a good idea to freeze leftover wine as ice cubes. .. can be used for cooking then when suits.

    Though a half bottle a week would result in a lot of wine ice cubes!!!

    Maybe use the ice cube idea & adapt it a little, put a stick in the cube & hey presto! Merlot ice lollies!

    The vaccuum things work well (rubber corks and a separate syringe), but nothing can keep wine a week without something else. Putting it in the fridge does slow down oxidisation/'brandying', so I find both works well, but always bring the wine back up to ambient room temperature before drinking or it won't be worth it.

    A good vacuum stopper will work for 3-4 days. Some people like those inert gas pumps but I haven't tried them. I think they are supposed to keep it for up to 5 days. Putting it into a smaller bottle should help but you would still need to prevent oxidisation.
    To be frank, your basic supermarket bottle won't suffer much after 3-4 days but anything of higher quality I would drink at it's best!
    Simplest solution would be to buy half or quarter bottles. It works out cheaper than throwing it out!
