Smoked chicken breast. Like a smoked ham but a chicken equivalent.

What makes it French? Is it up the deli you get it?

    Do it yourself:)

You will need old stainless steel collander which will fit into old stainless steel pot with the plate on the bottom and lid to put on top.

Simply season your chicken breast and sear it on both sides, don't need to cook it through. Get handful of wood chips (i.e. oak), place on the bottom of the pot. Use plate to cover wood so ash won't get into the meat. Then collander with chicken. Put on the stove and wait till wood starts burning (better turn off your smoke alarm). When you see lots of smoke turn down the heat just to keep wood lightly burning and cover everything with a lid or thin foil. 200g chicken breast needs about 20-30 minutes in the warm smoke to be fully cooked.

If you understand the proccess and repeat it few times you will get perfect smoked chicken every time you want and 4 times cheaper.

They have it hanging with the smoked salmon etc in the aisle that has packets of ham, cheese etc.

Any of the Polish shops should have it - look for 'Kurczak Wędzony'.
Morliny is a well known chicken processor.
