so I was in France. restaurant option I cant understand

    I ordered a cheese and bacon burger. Was asked do I want it medium or well done.

    As I happened they sent it out wrong, I got a medium. And it looked flashed both sides and lofted out. Not almost cooked, properly red.

    Now id eat a steak medium no problem. But as far I know steak is fine flashed, but any minced or ground meat has to be fully cooked.

    Am I wrong or whats the story.

    If it's freshly minced specifically for the meal then it doesn't have to be fully cooked eg: steak tartar.
    The French like their meat bloody. The will serve pork and chicken pink.

    One thing about ordering food in France is that you need to go up a level, I worked in France and this was a common occurrence until I noticed that it was only English people complaining that their steaks were under-cooked, so I told the lads to up it one for "les rosbifs". Basically, if you want well done ask for very well done, medium ask for well done and rare ask for medium. Where I currently work, we ask people how they want their burgers done.

    Mince is fine to be red so long as it's good quality beef that's being minced and it was done recently (not long before being served).

    Mince you buy from the supermarket obviously needs to be cooked throughout as it can be sitting a while between being minced and being sold, and also supermarkets tend to mince the beef that has been sitting for a while and may be more difficult to sell as a burger / steak.

    That's pretty standard in the US too, they always ask if you want your burger medium or well done. I like red in the middle.

    Really this just illustrates that they don't know what they are doing, medium, well done, blue etc, are not judgement calls. You don't up it, you just either do it or you don't.

    I had a burger and chips at a motorway services outside Lille once.

    They never asked me how I wanted it cooked, at least I don't think they did, it took me long enough to convey 'Je voudrais avec le bap'

    Was there once, ordered a calzone pizza. Cut into it looks at the the knife and wonder why it had some kind of clear ooze on it?

    Cut a bit more and discover a raw egg in the middle. For fùcks sake, why ruin a perfectly good pizza with that shît :mad:

    I lived within a French family once on a language exchange in France (Nice) and they slagged me for liking my meat 'well done'. Told me it destroyed good meat. So I ended up trying it their way. It was weird but I ate it. Cultural assimilation ftw.

    One thing I could never get was having cheese and bread as a dessert. Found it far too heavy at times. I'm just happy with a coffee. :)
