Check all your carpets including in your boot. I suspect you will find some are damp/wet and this is causing the condensate.

Check the setting for fresh air or recycling air in cabin. If its recycling air even with heat up full windows wont clear fully. Had this problem lately. Was actually taking car into garage to have it checked out when I copped the knob set to recycling air. Cleared windows in 10 mins.

Is the car losing any coolant - a leaking heater radiator can also cause this problem and use of the demister can make it worse .
Also Passats ( don't know if it was just earlier ones ) had a problem with water collecting under where the battery is and eventually leaking into the car (usually around the pollen filter seal)- the water often collected in the rear footwells even though it was coming in from the front.
The problem was usually due to blocked drainage pipes in the area under the battery - one at each end . Clearing these often cured it - but you still have to dry out the interior.

Yes it's losing coolant quite regularly, also I have recently replaced the battery and noticed there was some liquid under it, should I try tackle this myself or go to the garage?

The water under the battery you could probably sort out yourself .
There are drains (with short lengths of rubber pipe) for this space under where battery is - you may have to remove battery to improve access .
What happens is the drains get blocked up with dead leaves etc - and as the water has no place to go it builds up and eventually begins to flow into the car -usually around where the pollen filter is .
When you locate the drains you just have to clear them (just poke something through them) so water can drain. Of course you probably will have some water still in the car - lift the sides of the carpet and see if its wet front or rear(usually on passenger side as its on that side the pollen filter is ). The sound deadening material can hold a lot of water .
If there is a coolant leak from the heater radiator this would mean replacing the rad - this could be a bit more tricky . If its a coolant leak you may notice that its hard to clean the windscreen inside (smears a lot ) and you may also notice a kind of a 'sweet' smell off it as its contains antifreeze.
I think there may be some 'how to's ' on Youtube - will let you know if I come across anything helpful.
