Check the coolant hose going from the back of the head to the heater matrix. The o-ring on the hose connection can perish and leak.

My ancient 1.4 fabia does the same been going on for about 8 months ,topping up the bottle every month to six weeks. been in with the mechanic a few times but can't find the leak (was waiting for it to get worse but it hasn't )
We did get a new thermostat fitted before the leak showed up ...

I'd check the portion of the cooling system that the thermostat isolates then. Could be a perished seal in there that wasn't under pressure while the thermostat was dead and now that it's fixed it's leaking through it.
