    I have a number of websites in which I change the content regularly. In your view what would be a good word count in terms of SEO per web page. I.e 500 or 1000 words etc.

    Well anything really over 500 would not really be classed as thin content but there is extra weight for given by google for 1500 up I don't know how true that is but I have read it on quicksprout.
