Not another Pizza dough recipe thread

    Yes it's one of those and I know its been done to death but I'm looking for something in particular: a pizza dough that uses plain flour so I can substitute in spelt flour. I know strong white flour is better but I can't get strong spelt flour. Off wheat for a while due to diet restrictions.
    Ideally looking for a neapolitan or NY pizza dough recipe with plain flour. Tried jim Laheys no knead dough but I think kneaded dough is a bit better.
