Advice on cookery classes in Italy

Heading off to Italy for 3 weeks in sept to Italy with the husband and we are hoping to do a one day cookery class while travelling around. Would anyone have any recommendations of places to do it at all? Thanks

Myself and my boyfriend stayed in Lucca a few years ago and we did a half day cooking class with Chef Paulo Monti. He has lots of different types of classes to choose from, pasta making, sauce basics and pizzas. It was so enjoyable and was in a lovely setting in the countryside just outside Lucca. The best part was eating everything we cooked at the end with some lovely wine! You can find details at this website: http://www.cucina-italiana.com.
His classes are extremely popular so booking in advance is advisable.
