And can this be done without the knowledge of a parent/guardian?

Of course they can. No problems.

Thank you! Also do you know if it is possible to go to a GP other than the one in your own town. For example, I live in the North County Dublin area, could I go to any GP there or do I have to stick with the one in my town?

You can go to anyone anywhere you like (if you are on a medical card it may be more difficult)

http://www.irishstatutebook.ie/1997/en/act/pub/0026/sec0023.html#sec23 is the legislation behind this - basically 16/17 year olds can consent to their own treatment. I'm not sure what the restrictions are below that but the main medical protection insurance providers for GPs are generally quite clear on not doing anything for under-16s.

Private patients can pretty much see a GP at will but some GPs may be unwilling to see a <18 they've never known before; some will request a medical record transfer and so on. You may need to phone around. If its a specific service you're looking for (e.g. contraception or a specific minor surgery) there are likely to be GP practices that specialise in that.

To clarify, pretty much anywhere will do the contraceptive pill. I think MYOB is referring to things like Implanon (the bar) or Mirena coils. Although the pill can be a tricky issue under 16, possibly 17, and would depend on the GP, you'd need to talk to them individually.
