How is my lifting diet?

Recently I have lost about 1.5 stone in fat to reduce a large stomach (lots of cardio). Now I'm in the gym lifting, 3 times per weeks (plus 2 other days of core work). I really want to keep the fat off but get a bigger, more toned body. I'm male, 32 and 65kg.

Can anyone give me their opinion on my diet. I'm pescatarian hence no chicken but am considering a return to meat eating if this will speed up my building.

    Breakfast:
Bowl Porridge x 2 with skimmed milk
    OR
Poached egg x 2 on brown bread toast + tea

    11am
    Whey Protein shake / nuts

    12pm Workout

    Lunch
    Whey Protein shake
Tuna salad (cottage cheese, lentils, beans, brocoli, hummus, sweetcorn)

    4pm
    Whey Protein shake / nuts

    7 pm Dinner:
Fish, potatoes, rice, veg, baked beans, etc.

    9pm Snack:
Brown bread toast with peanut butter x 3

What sort of routine do you do in the gym on lifting days? core work only needs 10 minutes, might as well throw it on the end f your other workout days. What sort of volume of food is your dinner? not much eating in anything else there.

Workouts are an hour. Monday shoulders/triceps/chest day, Tuesday core (plank etc), Wednesday biceps/back/legs days, Thursday pilates, Friday repeat Monday or Tuesday's regime.

My dinner is usually 2 frozen cod steaks, 4 large potatoes and veg/beans.

How many calories are you consuming a day? full body workouts, 3 sets a body part, 3 days a week are generally the best way to go I think

You're going to have to find out if you want any relevent/useful feedback. It's calories that determine weight loss/gain.

To get an accurate reading, is label reading and counting up a day the best way?

You can use trackers like myfitnesspal to keep an eye on what you are eating. When you find out post again. Post up your routine too while you are at it.
2k calories is about maintenance for you, you'll need to eat more.
