Monkfish recipe

    Evening,

    Just received a nice bit of frozen monkfish.
    Never cooked it before, any ideas?

    Often seen it done in a Thai red curry, but never really liked the idea of a fish curry.

    Thaw it (ob) and wrap it in some pancetta or air dired ham - Aldi have nice sliced hams like this. Ham adds a nice saltiness to it, brown it off in a pan (oil and butter) and stick it in oven at 180c for small amount of time - tops 10 mins depending on size of the monktail. DON'T overcook !

    similiar to above recipe but wrap the ham wrapped fish in clingfilm and tightly knot both ends. Poach for 5 minutes or so depending on size of portion, remove cling film and pan fry to crisp up ham on the outside. Keeps the flesh nice and moist.
