Santa in CH Chemist, Tralee is meant to be good.
There is also Santa in Manor Shopping Centre, and I think Ballyseedy garden centre have a special breakfast with Santa, but not sure on how that works. Check their facebook page https://www.facebook.com/pages/Ballyseedy-Home-Gardens/154396124577736?fref=ts

Usually sets up in the Outlet Centre in Killarney too. Starting this weekend afaik. Bit early imo but there you go.

Crag caves in castleisland do a Santa thing every year too. It's very well laid out.
