I know McConnons and Bus Eireann run a bus from Castleblayney to Dublin and Collins coaches go from Carrickmacross but I was wondering if there's another operator who goes from Castleblayney to Dublin daily (and back)?

Only the Collins coaches run at suitable times potentially but it would mean a very early start to get to Carrickmacross.

You have Bus Eireann route 32 and route 177, together with McConnons. That's it I'm afraid.

John McGinley route 932 from Castleblaney By-Pass - somewhere near the Dublin road roundabout. It is an Annagry (Donegal) to O'Connell Street service. It may overlap with the Bus Éireann service.
