Advice on insulating kitchen roof

    Hi folks,

    The roof over our kitchen is comically bad and it is freezing compared to the rest of the house.

    Just removed two wooden panels from the ceiling to take a peek at what's underneath (pics attached).

    Would really appreciate the following advice:
    1) if I removed the panels, what sort of insulated plasterboard would I replace it with?
    2) given the plastic lining underneath, is it ok to just nail the new boards to the rafters?
    3) given the roof tops to an apex, any advice on how I would finish the middle bit? Can you get a 'bendy piece' that joins the two pitches?
