    Hi there lads dose any body know a butcher that will do a deer for me in around the limerick Clair tipp areas I'm looking for some sausages and burgers made up . cheers lads

    Legally they cant do any butchering of game on their premises unless liscensed to handle and sell game
    .Risk of cross contamination according to "Elf and saftey".
    Even to using a completely different set of tools is mandatory .
    So that rules out them running any venison thru the shop mincer either.

    However,that's not to say if you have a clean area,are not selling the meat and is for your own consumption that you could ask your local butcher to call over off duty and show you how to break up the carcass?
    A LIDL/ALDI mincer for 25 quid will handle the burger meat and some have a sausage attachment as well.

    Plus 2 on the posts.
    Why not have a word with some other stalkers and get together, there's a mine of info out there as well as a huge skills base.
    Lidal & Aldi are the biz for equipment including vacuum packers.
    I started last year on sausages, Google'd, read and picked some brains for recipes and techniques. I bought a cheep set of nozzles of EBay and dived right in and now make between 5-8 lb of sausage from an adult sika.......

    Just got a recipe for canning venison, hope to get an animal this week, have the jars ready and waiting.......hmmmmm

    There's a company in the Sandyford industrial estate that sell jars &bottles etc & cheaper than IKEA (for beer bottles anyhow). Worth a look. Theyre called ALLPACK
