When I have a folder open and spread out the columns, is there any way of locking the columns so that they remain spread out next time I open the folder.

I've tried everything like 'apply this to all folders of this type' but can't lock the columns>open for next time.:(

Try changing the settings by going to Control Panel > Folder Options.

You should get more Universal results than just Tools > Folder Options.

Right click on column header - 2 of the options are size the column to fit, size all columns to fit.
Also last option "more" takes you to selection window for the columns. Here you can set individual sizes for each column. The values you choose should stick.
